1g 200 bloom gelatin or 1/2 sheet Vahiné gelatin

For the Shortcrust Pastry:

130g soft butter

260g flour

90g icing sugar

30g pecan powder

2g salt

1 egg

Egg yolk + 4/5g liquid cream (for egg wash)

For the Pecan Cream:

35g soft butter

35g icing sugar

35g pecan powder

35g egg

For the Fondant Vanilla Apples:

2 apples

1 packet vanilla sugar

For the Salted Butter Caramel:

80g powdered sugar

50g liquid cream

50g semi-salted butter
