Smoked Sausage with Potatoes, Sauerkraut, & Ale

Ingredients:

– 1 pound smoked sausage (such as kielbasa or bratwurst), sliced into rounds

– 1 tablespoon olive oil

– 1 onion, thinly sliced

– 2 cloves garlic, minced

– 1 pound potatoes, peeled and diced

– 1 (16-ounce) can sauerkraut, drained and rinsed

– 1 cup ale or beer

– 1 tablespoon whole grain mustard

– 1 tablespoon brown sugar

– Salt and black pepper, to taste

– Chopped fresh parsley, for garnish (optional)
