Smoked Sausage with Potatoes, Sauerkraut, & Ale

1. In a large skillet or sauté pan, heat the olive oil over medium heat. Add the sliced smoked sausage and cook until lightly browned, about 5 minutes. Remove the sausage from the skillet and set aside.

2. In the same skillet, add the sliced onion and minced garlic. Cook until the onions are soft and translucent, about 3-4 minutes.

3. Add the diced potatoes to the skillet and cook for an additional 5 minutes, stirring occasionally.

4. Stir in the sauerkraut, ale (or beer), whole grain mustard, and brown sugar. Season with salt and black pepper to taste.

5. Return the cooked smoked sausage to the skillet and stir to combine all the ingredients.

6. Cover the skillet and simmer over low heat for 15-20 minutes, or until the potatoes are tender and the flavors have melded together.

7. Once cooked, remove the skillet from the heat and let it sit for a few minutes.

8. Garnish the Smoked Sausage with Potatoes, Sauerkraut, & Ale with chopped fresh parsley, if desired, before serving.
