Lemon Bars

Directions:

Preheat oven to 350°F (175°C).
In a medium bowl, mix 1 cup flour and 1/4 cup sugar. Cut in butter until mixture resembles coarse crumbs.
Press into the bottom of an ungreased 8×8 inch pan.
Bake for 15 minutes in the preheated oven, or until golden.
In another bowl, whisk together the remaining 1 cup sugar and 2 tablespoons flour. Whisk in the eggs and lemon juice.
Pour over the baked crust.
Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool.
After the bars have cooled, dust the tops with powdered sugar.
