Step 1: Peel the Lemons
- Wash lemons thoroughly.
- Use a peeler or knife to remove the yellow zest only (avoid the bitter white pith).
- Place zest in a clean, large glass jar.
Step 2: Infuse the Alcohol
- Pour alcohol over the lemon peels until fully submerged.
- Seal the jar and place it in a cool, dark area.
- Let it infuse for at least 20 days, shaking gently every 2–3 days.
Step 3: Make the Sugar Syrup
- Combine water and sugar in a saucepan over medium heat.
- Stir until sugar is fully dissolved.
- Let it cool to room temperature.
Step 4: Combine Infused Alcohol with Syrup
- Strain out the lemon peels using a cheesecloth or fine mesh sieve.
- Mix the infused alcohol with the cooled syrup.
- Stir to blend the flavors.
Step 5: Let It Rest Again
- Seal the jar and let the mixture rest for another 30 days.
- This second rest helps the flavors mellow and merge.
Step 6: Bottle and Store
- Strain again if needed.
- Use a funnel to transfer limoncello into clean glass bottles.
- Store in the freezer, and serve ice-cold in small glasses.
