Step 2: Cook Beef and Potatoes
Add ground beef, breaking it up as it browns. Stir in diced potatoes, paprika, oregano, salt, and pepper. Cover and cook 8–10 minutes, stirring occasionally, until potatoes are tender. Remove from heat and let cool slightly.
Step 3: Add Cheese
Once the mixture is warm but not steaming, fold in the shredded cheese. Tip: Allowing it to cool slightly prevents the cheese from melting too early, giving a better stretchy texture after baking.
Step 4: Assemble the Roll
Preheat oven to 375°F. Roll out the dough into a large rectangle. Spread the filling evenly, leaving a small border around the edges.
Step 5: Roll and Seal
Roll the dough tightly, like a cinnamon or jelly roll. Pinch the edges and seam firmly to seal. Place seam-side down on a lined baking tray.
Step 6: Finish and Bake
Whisk the egg and brush over the top, then brush melted butter. Sprinkle with sesame seeds or herbs if desired. Bake 22–25 minutes until golden brown.
Step 7: Rest and Slice
Let the roll rest 5 minutes to allow the filling to set. Slice and serve warm
