Tuscan Chicken

Directions:

Season the chicken breasts with Italian seasoning, salt, and pepper.
In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the diced onion and garlic. SautΓ© for 2-3 minutes until the onion is translucent and the garlic is fragrant.
Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer and cook for 5 minutes until the sauce thickens.
Stir in the grated Parmesan cheese until melted and smooth. Add the sun-dried tomatoes and spinach, cooking until the spinach is wilted.
Return the chicken breasts to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes until the chicken is heated through.
Garnish with fresh basil before serving.
