The Pioneer Woman’s Blackberry Cobbler

Preheat the oven to 375°F (190°C).
In a saucepan over medium heat, combine blackberries, granulated sugar, and water. Bring to a boil and then simmer for about 5 minutes until the sugar is dissolved and the berries are syrupy.
In a mixing bowl, whisk together flour, baking powder, and salt. Stir in melted butter and milk until just combined to form a batter.
Pour the hot blackberry mixture into a baking dish. Spoon the batter over the blackberry mixture, spreading gently to cover.
Sprinkle the top with 2 tablespoons of sugar.
Bake for 25-30 minutes or until the top is golden and a toothpick inserted into the cobbler topping comes out clean.
