Sweet Hawaiian Crockpot Chicken

Season the chicken breasts with salt and pepper, then place them in the crockpot.

In a medium bowl, whisk together pineapple juice, brown sugar, soy sauce, ketchup, ginger, and garlic. Pour this mixture over the chicken in the crockpot.

Add the chopped bell pepper and pineapple chunks to the crockpot.

Cover and cook on low for 6 hours or on high for 3 hours, until the chicken is tender and cooked through.

If you prefer a thicker sauce, mix cornstarch and water in a small bowl. Stir this mixture into the crockpot during the last 30 minutes of cooking.

Serve the chicken hot, garnished with additional pineapple chunks and bell pepper if desired.
