Strawberry Cream Cheese Muffins

Directions:

Preheat your oven to 400°F (200°C) and line a muffin pan with paper liners.
In a large bowl, whisk together the flour, 1/2 cup sugar, salt, and baking powder.
In another bowl, mix the vegetable oil, egg, 1/3 cup milk, and 1 teaspoon vanilla extract.
Combine the wet ingredients with the dry ingredients gently until just mixed. Fold in the chopped strawberries.
Fill the muffin cups 1/4 full with the batter. Then, mix the cream cheese, 2 tablespoons sugar, and 1/2 teaspoon vanilla extract in a bowl. Drop a teaspoon of this cream cheese mixture into each muffin cup and top with more batter until 3/4 full.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
