Spaghetti Squash Lasagna

1 large spaghetti squash
1 lb lean ground turkey
2 cups marinara sauce
1 cup part-skim ricotta cheese
1 cup shredded mozzarella cheese
2 cloves garlic, minced
1 small onion, diced
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh basil or parsley for garnish (optional)
Instructions:

1. Preheat the Oven:

Preheat your oven to 400°F (200°C).
2. Prepare the Spaghetti Squash:

Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds and pulp with a spoon.
Place the squash halves, cut side down, on a baking sheet lined with parchment paper.
Bake in the preheated oven for 40-45 minutes, or until the squash is tender when pierced with a fork.
Remove the squash from the oven and let it cool slightly.
3. Cook the Turkey Meat Sauce:

While the squash is baking, heat a skillet over medium heat and add a drizzle of olive oil.
Add the diced onion and minced garlic to the skillet and sauté until softened and fragrant, about 2-3 minutes.
Add the lean ground turkey to the skillet and cook until browned and cooked through, breaking it apart with a spoon as it cooks.
Pour in the marinara sauce and Italian seasoning, stirring to combine. Let the sauce simmer for 5-7 minutes, then remove it from the heat.
4. Prepare the Ricotta Cheese Mixture:

In a small bowl, combine the ricotta cheese with salt and pepper to taste. Mix until well combined.
5. Assemble the Lasagna:

Once the spaghetti squash has cooled slightly, use a fork to scrape the strands of squash from the skin, creating “noodles.”
In a baking dish, spread a thin layer of the turkey meat sauce on the bottom.
Arrange a layer of spaghetti squash noodles on top of the sauce.
Dollop spoonfuls of the ricotta cheese mixture over the squash noodles, spreading it out evenly.
Spoon more of the turkey meat sauce over the ricotta cheese layer.
Repeat the layers until all the ingredients are used, finishing with a layer of turkey meat sauce on top.
6. Bake the Lasagna:

Sprinkle the shredded mozzarella cheese evenly over the top layer of meat sauce.
Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the edges are golden brown.
7. Serve and Garnish:

Once the lasagna is cooked through and the cheese is golden and bubbly, remove it from the oven.
Let it cool for a few minutes before slicing into portions.
Garnish with fresh basil or parsley if desired, and serve hot.
