Southern Smothered Chicken

1. Cook up the bacon in a skillet over medium heat until it gets nice and crispy. Chop it up and set it aside. Hang on to that bacon grease for later.
2. Mix together the flour, onion powder, garlic powder, paprika, salt, pepper, ginger, and cinnamon in a bowl. Put aside about 1/4 cup of that flour mix.
3. Pat those chicken breasts dry with some paper towels. Then give them a good coating in the remaining flour mix, shaking off any extra.
4. Melt a tablespoon of butter in the skillet along with that reserved bacon grease over medium heat. Toss in the chicken and cook it up until it’s golden brown on both sides. Plate up that chicken and set it aside.
5. Melt enough butter in the skillet to make about 4 tablespoons of fat. Drop the heat down to medium-low. Stir in that flour you set aside. Keep stirring and cooking for about 3 minutes, scraping up all those tasty brown bits from the bottom of the skillet.
6. Slowly pour in the milk and chicken broth, taking turns between the two while you keep on whisking like a champ. Toss the chicken back into the pan and let it all simmer for about 10 minutes to get everything nice and warm and finish cooking up that chicken.
7. Sprinkle on that chopped bacon and add a little fresh parsley or thyme for a fancy touch. Serve it up and enjoy your Southern Smothered Chicken!
