Savory Balsamic Soy Roasted Garlic Mushrooms

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the balsamic vinegar, soy sauce, minced garlic, olive oil, honey or maple syrup, dried thyme, salt, and pepper.
Add the mushrooms to the bowl and toss to coat them evenly in the marinade.
Spread the mushrooms out in a single layer on the prepared baking sheet.
Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the mushrooms are tender and caramelized.
Remove from the oven and transfer to a serving dish. Garnish with fresh parsley before serving.
