Sausage Bredie ( Sosys kos )

Heat the oil in a saucepan, over medium heat.
Sauté the onions in the oil until golden, soft and golden brown.
Add the potatoes and simmer over medium heat for 15 minutes , stirring often and adding drops of water to prevent the potatoes sticking to the pan and burning. not a lot of water as you want the potatoes to get a brownish colour.
Add the garlic, salt, chillies and tomatoes if you going to use it, simmer a further 5 minutes or so.
Add the sausages, stir and cook until the potatoes are completely soft.
Continue to add little bits of water to whatever consistency you like it.

Serve warm with steamed / boiled white rice or fresh bread.

Delicious

Variation: Add a a tin or two of baked beans to stretch this dish even further.
