Rolled Sugar Cookies

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the eggs and vanilla extract, and mix until well combined.
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until the dough comes together.
If you want to use food coloring, divide the dough into separate portions and add food coloring to each portion. Mix until the color is evenly distributed.
Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
Roll out the chilled dough on a floured surface to your desired thickness.
Use cookie cutters to cut out shapes and place them on the prepared baking sheets.
If using sprinkles, decorate the cookies as desired.
Bake for 8-10 minutes or until the edges are lightly golden.
Let the cookies cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely.
