Pineapple Quick Bread

Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, salt, and cinnamon.
In another bowl, mix together the vegetable oil, eggs, and vanilla extract until well combined.
Add the wet ingredients to the dry ingredients and stir just until moistened.
Fold in the crushed pineapple and chopped pecans, if using.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
