Pineapple Chicken and Rice! 


Instructions:
Season & Sauté: Season chicken with thyme, salt, and pepper. Brown in oil in a skillet.
Sauce Prep: Whisk reserved pineapple juice with Dijon mustard, honey, and garlic.
Simmer: Add sauce to skillet, cover, simmer for 15 mins.
Thicken Sauce: Mix cornstarch with some pineapple juice, add to skillet, boil until thick.
Finish: Add chicken back, top with pineapple slices, heat through.
Serve: Spoon chicken and pineapple over fluffy rice. Enjoy!
