My hubby is not a beet lover, but he couldn’t resist this dish!

Ingredients
1 (15-ounce) can of whole or sliced beets

1 small onion, finely chopped

2 tablespoons apple cider vinegar

1 tablespoon brown sugar

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

2 cloves of garlic, minced

2 tablespoons unsalted butter

1 teaspoon cornstarch (optional for thickening)

Fresh parsley, chopped (for garnish)
