My Amish friend brought these guys to a recent potluck and everyone drooled over them!.

Prepare Onions: Place the thinly sliced onions in a large bowl and sprinkle with a little salt. Let them sit for about 10 minutes to release some moisture. Then, drain any excess liquid.

Make Batter: In a separate mixing bowl, whisk together the flour, baking powder, salt, black pepper, garlic powder, and paprika. In another bowl, beat the eggs and milk together. Gradually pour the egg mixture into the dry ingredients, stirring until you have a smooth batter.

Combine Batter and Onions: Add the drained onions to the batter and mix until they are evenly coated.

Heat Oil: In a deep skillet or pot, heat vegetable oil to 350°F (175°C). You want enough oil to submerge the fritters.

Fry Fritters: Drop spoonfuls of the onion batter into the hot oil, making sure not to overcrowd the pan. Fry the fritters for 2-3 minutes on each side, or until they are golden brown and crispy.

Drain and Serve: Once the fritters are cooked, use a slotted spoon to transfer them to a plate lined with paper towels to drain off any excess oil.
