Mediterranean Eggs Benedict with Tahini Hollandaise

Ingredients
Produce
• 1 (6oz) bag Baby spinach, fresh
• 1 pint Cherry tomatoes
• 1 Chives
• 1 Shallot, medium
Refrigerated
• 3 Egg yolks, large
• 8 Eggs, large
Condiments
• 2 tbsp Lemon juice, fresh
• 1 tbsp Soom premium tahini
Baking & Spices
• 1/2 cup Avocado oil
• 1/4 tsp Black pepper
• 1/4 tsp Granulated sugar
• 1 tsp Kosher salt
• 1/4 tsp Sumac, ground
• 1/2 tsp White pepper
Oils & Vinegars
• 2 tbsp Avocado or olive oil
• 1 tsp White vinegar
Bread & Baked Goods
• 4 English muffins
Liquids
• 2 tbsp Water

Prepare Ingredients: Rinse the baby spinach and cherry tomatoes. Finely chop the chives and shallot. Separate the egg yolks from the whites, keeping the yolks for the hollandaise sauce.
