Malva Pudding


INSTRUCTIONS
Preheat the Oven:

Preheat your oven to 180°C (350°F). Grease a baking dish.
Prepare the Batter:

In a large mixing bowl, beat the caster sugar and eggs until pale and fluffy.
Add the apricot jam and mix well.
Combine Dry Ingredients:

In a separate bowl, sift together the plain flour, bicarbonate of soda, and a pinch of salt.
Melt Butter:

In a small saucepan, melt the butter. Remove from heat and add the white vinegar and milk.
Mix the Batter:

Add the flour mixture to the egg mixture, alternating with the butter mixture. Mix until well combined.
Bake the Pudding:

Pour the batter into the prepared baking dish. Bake in the preheated oven for 25-30 minutes, or until a skewer inserted into the center comes out clean.
Prepare the Sauce:

While the pudding is baking, prepare the sauce. In a saucepan over medium heat, combine the double cream, butter, white sugar, and Amarula. Stir continuously until the butter is melted and the sugar is dissolved. Do not boil.
Soak the Pudding:

When the pudding is done baking, remove it from the oven and immediately pour the hot sauce over it. Let it soak for a few minutes to absorb the sauce.
Serve:

Serve the Malva Pudding warm, on its own or with a scoop of vanilla ice cream. Enjoy this delicious South African dessert!
