Preheat your air fryer to 375°F (190°C).
Roll out the puff pastry sheet on a lightly floured surface to a rectangular shape.
Spread a thin layer of Dijon mustard evenly over the puff pastry.
Lay the prosciutto slices on top of the mustard-covered pastry.
Arrange the thinly sliced brie over the prosciutto.
Starting from one end, carefully roll the puff pastry sheet into a log or cylinder.
Cut the rolled pastry into 1-inch slices to create pinwheels.
Place the pinwheels in the air fryer basket, leaving some space between them.
Air fry for about 8-10 minutes or until the pinwheels are golden brown and the cheese is melted.
While the pinwheels are cooking, mix honey with a little Dijon mustard for a dipping sauce.
Once done, remove the pinwheels from the air fryer and let them cool for a few minutes.
