Loaded Mashed Potatoes

Place the potato chunks in a large pot and cover with cold water. Add a generous pinch of salt to the water.

Bring the water to a boil over medium-high heat, then reduce the heat to medium-low and simmer the potatoes until they are fork-tender, about 15-20 minutes.

Drain the potatoes and return them to the pot.

Add the milk and butter to the pot with the potatoes. Use a potato masher or a hand mixer to mash the potatoes until they reach your desired consistency. If you like creamier mashed potatoes, you can add more milk.

Stir in the shredded cheese, chopped green onions or chives, and crumbled bacon. Season with salt and pepper to taste.
