Lemon Herb Pork Chops with Mashed Potatoes!

Directions:
For the Pork Chops: Preheat oven to 375°F (190°C). In a bowl, mix olive oil, lemon juice, rosemary, thyme, garlic, salt, and pepper. Rub mixture onto pork chops.
Heat a skillet over medium-high heat. Sear pork chops for 3-4 minutes on each side until browned. Transfer to the oven and bake for 15-20 minutes, or until cooked through.
For the Mashed Potatoes: Boil potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and return to the pot.
Mash potatoes with milk and butter until smooth. Season with salt and pepper.
