Kafta kebabs

In a large bowl, combine the ground meat, onion, garlic, parsley, cilantro (if using), cumin, paprika, cinnamon, salt, and pepper. Mix well until all the ingredients are thoroughly incorporated.

Take a handful of the meat mixture and mold it around skewers into the shape of a sausage. If you’re not using skewers, form them into oblong shapes suitable for grilling.

Preheat your grill or broiler to medium-high heat. Brush each kafta kebab lightly with olive oil to prevent sticking.

Grill or broil the kafta kebabs, turning occasionally, until they are cooked through and nicely browned on all sides, about 10-15 minutes.

Serve the kafta kebabs hot, accompanied by flatbread, a selection of fresh vegetables, and dipping sauces like tahini or yogurt sauce for a complete meal.
