John Wayne Casserole

Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
In a large skillet, cook the ground beef, onion, and red bell pepper over medium heat until the beef is browned and the vegetables are tender. Drain any excess grease.
Stir in the diced tomatoes with green chilies, tomato sauce, and taco seasoning mix. Simmer for 5 minutes.
Spread the beef mixture evenly into the prepared baking dish. Sprinkle with 1 cup of shredded cheddar cheese.
In a mixing bowl, combine the cornbread mix, milk, eggs, and sour cream until smooth. Pour the mixture over the beef mixture in the baking dish.
Bake for 30 minutes, or until the cornbread topping is golden brown and set.
Sprinkle the remaining 1 cup of shredded cheddar cheese over the top of the casserole during the last 5 minutes of baking.
Garnish with sliced green onions before serving.
