Homemade Potato Soup Recipe

1. Start by cooking the bacon in a soup pot until it gets crispy. Once done, take it out and keep it aside. You can pour off most of the bacon fat from the pan, but don’t bother cleaning it.
2. Put the pan back on medium heat and toss in the onion, celery, and carrot. Stir and cook for about two minutes.
3. Add in the diced potatoes, salt, pepper, and any other seasonings you fancy.
4. Pour in the broth and bring it to a gentle boil.
5. Let it cook for about 10 minutes or until the potatoes begin to soften.
6. Whisk together the flour and milk, then pour it into the pot while stirring continuously.
7. Keep cooking for another 5 minutes.
8. Carefully scoop out about a quarter to half of the soup and blend it until smooth in a blender or food processor.
9. Pour this mixture back into the pot slowly and carefully to avoid any splashing.
10. Stir in the crumbled bacon, reserving some for garnish.
11. Serve in bowls, topped with parsley, bacon, and a sprinkle of cheese. Enjoy your homemade potato soup
