Homemade Cream Cheese Flan


Directions:
1. Prepare the Caramel:
o In a medium saucepan over medium heat, melt 1 cup of granulated sugar, stirring constantly until it becomes a golden-brown caramel. Be careful not to burn it.
o Quickly pour the caramel into a 9-inch round baking dish, tilting the dish to evenly coat the bottom. Set aside to cool and harden.
2. Blend the Flan Mixture:
o In a blender, combine 1 (14 oz) can of sweetened condensed milk, 1 (12 oz) can of evaporated milk, 6 eggs, 1 (8 oz) package of softened cream cheese, 1/3 cup of 2% milk, and 1 tsp of vanilla extract.
o Blend until the mixture is smooth and well combined.
3. Pour and Bake:
o Pour the flan mixture over the hardened caramel in the baking dish.
o Preheat your oven to 350°F (175°C). Place the baking dish in a larger baking pan and fill the larger pan with hot water until it reaches halfway up the sides of the flan dish.
4. Bake in a Water Bath:
o Bake the flan in the preheated oven for about 50-60 minutes, or until the center is set and a knife inserted into the center comes out clean.
5. Cool and Chill:
o Remove the flan from the oven and let it cool in the water bath. Once cool, refrigerate the flan for at least 4 hours, or overnight.
6. Serve:
o To serve, run a knife around the edges of the flan to loosen it. Invert a serving plate over the baking dish and flip to release the flan onto the plate, allowing the caramel to drizzle over the top. V
