Garlic Flatbread

In a large mixing bowl, combine the flour, salt, and baking powder. Add the olive oil and mix until the mixture resembles coarse crumbs.
Gradually add the warm water and mix until a dough forms.
Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Cover with a cloth and let it rest for at least 30 minutes.
Make the Garlic Mixture:
In a small bowl, mix the minced garlic with the chopped parsley and a little olive oil to create a fragrant garlic paste.
Shape and Cook the Flatbreads:
Divide the dough into equal-sized balls (about 8-10). Roll each ball into a thin circle about 1/8 inch thick.
Heat a skillet over medium-high heat. Brush each side of the flatbread lightly with olive oil.
Cook each flatbread for about 2 minutes on each side, or until golden brown and puffed up.
As soon as each flatbread comes off the skillet, brush generously with the garlic and parsley mixture.
Serve:
Serve the garlic flatbreads warm, ideally as they come off the skillet for maximum freshness.
