Drunken Lobster Tail Skewers


Directions:

Prepare the Lobster Tails:
Using kitchen shears, cut down the top shell of each lobster tail, stopping at the base of the tail.
Gently pull the lobster meat out of the shell, leaving the end attached, and lay it on top of the shell.
Marinate the Lobster:
In a large bowl, combine the white wine, fresh lemon juice, minced garlic, chopped parsley, chopped cilantro, paprika, red pepper flakes (if using), salt, black pepper, and olive oil. Mix well.
Place the lobster tails in the bowl, ensuring they are well coated with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
Prepare the Skewers:
Preheat your grill to medium-high heat.
Remove the lobster tails from the marinade and thread them onto skewers. If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
Grill the Lobster Tails:
Place the lobster skewers on the preheated grill.
Grill for 5-7 minutes per side, or until the lobster meat is opaque and cooked through, basting occasionally with the remaining marinade.
Serve:
Remove the lobster skewers from the grill and let them rest for a few minutes.
Serve hot with lemon wedges on the side.
