Cowboy Breakfast Sandwiches


Instructions:
Cook the Toast:
Cook the Texas toast on a griddle over medium heat with lots of butter until golden brown. Set aside.
Cook the Sausage:
Form sausage into 8 patties and cook in a skillet over medium heat until browned and cooked through. Set aside.
Prepare the Eggs:
Whisk eggs, half-and-half, salt, and pepper. Melt butter on the griddle, pour eggs in a rectangular shape, and cook. Flip to cook both sides. Cut into pieces to fit the toast.
Assemble the Sandwiches:
Layer toast, a slice of cheese, a sausage patty, eggs, salsa, another sausage patty, cheese, and toast.
Serve:
Serve hot and enjoy!
