Coconut Chicken Curry

Marinate chicken pieces with garlic, ginger, salt, and all the masala for at least 30 minutes

Warm coconut oil in a pot
Add and lightly brown sliced onion.
Add and sear marinated chicken pieces both sides
Add chopped tomato and tomato paste
Stir and add drops of water to prevent chicken from sticking to the pot
Cover and cook for about 10 minutes stirring every now and again
Add coconut milk and cook for a further 15 minutes or so
Sprinkle with Chopped coriander leaves and enjoy

Serve with rice, roti and or naan.
