Chicken Stir Fry

Instructions:

1. Prepare the Sauce:
In a small bowl, whisk together brown sugar or honey, low-sodium soy sauce or tamari, cornstarch, and red pepper flakes (if using). Set aside.
2. Cook the Chicken:
Heat avocado or vegetable oil in a large skillet or wok over medium-high heat.
Add minced garlic and ginger to the skillet and cook for about 30 seconds, until fragrant.
Add thinly sliced chicken breasts to the skillet and stir-fry until they are cooked through and no longer pink. Remove the chicken from the skillet and set aside.
3. Cook the Vegetables:
In the same skillet, add a little more oil if needed.
Add broccoli florets, julienned carrot, thinly sliced red bell pepper, and thinly sliced yellow onion to the skillet.
Stir-fry the vegetables for about 3-4 minutes, or until they are tender-crisp.
4. Combine Ingredients:
Return the cooked chicken to the skillet with the cooked vegetables.
Pour the prepared sauce over the chicken and vegetables in the skillet.
Stir everything together until the sauce thickens and coats the chicken and vegetables evenly. This should take about 1-2 minutes.
5. Garnish and Serve:
Once the sauce has thickened and everything is well-coated, remove the skillet from heat.
Garnish the chicken stir-fry with chopped green onions and sesame seeds.
Serve the chicken stir-fry hot, either on its own or over cooked rice or noodles.
