Cheesy Chicken Fritters

1/3 cup mayonnaise

1 garlic clove, pressed
1/2 Tbsp lemon juice
1/4 tsp salt
1/8 tsp black pepper
Instructions:
Prepare the Chicken: Using a sharp knife, dice the chicken into 1/3″ thick pieces and place them in a large mixing bowl. Tip: Slicing is easier if the chicken breast is partially frozen.
Mix the Batter: To the chicken, add the eggs, mayonnaise, flour, shredded mozzarella, dill, salt, and black pepper. Stir until well combined. Cover and refrigerate for 2 hours or overnight to meld the flavors.
Cook the Fritters: Heat a large non-stick pan over medium heat with 2 Tbsp of oil. Once hot, spoon the chicken mixture into the pan, flattening slightly. Sauté for 3-4 minutes on one side, then flip and cook for another 3 minutes, or until golden brown and cooked through. Repeat with the remaining mixture, adding more oil as needed.
Prepare the Aioli: While the fritters cook, mix together the aioli ingredients in a small bowl until smooth.
Serve: Once cooked, serve the fritters hot with the garlic aioli dip on the side.
Recipe Notes:
Ensure the fritters are fully cooked by cutting one in half; the chicken should be white throughout. If they brown too quickly, lower the heat.
The aioli dip is optional but highly recommended for a burst of flavor.
