Carrot Cake Oatmeal Cream Pies


Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Stir in oats, grated carrots, walnuts, and raisins (if using).
Drop tablespoonfuls of dough onto prepared baking sheets, spacing them about 2 inches apart. Flatten slightly with the back of a spoon.
Bake for 10-12 minutes, or until the edges are golden brown. Remove from oven and let cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
