Bourbon-Glazed Blackened Cod

In a small bowl, combine bourbon, honey, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Stir to create a marinade.
Place cod fillets in a shallow dish and pour the marinade over them. Ensure each fillet is evenly coated. Marinate in the refrigerator for 30 minutes.
Heat olive oil in a skillet over medium-high heat. Remove cod from the marinade and sear each side for 4-5 minutes, until the outside is crisp and blackened.
Serve the cod fillets garnished with chopped parsley and lemon wedges on the side.
