Directions:

1. In a large pot, brown the beef stew meat over medium-high heat.
2. Add the chopped onion and minced garlic, sautéing until softened.
3. Pour in the red wine to deglaze the pot, scraping up any flavorful bits from the bottom.
4. Add the beef broth, carrots, parsnips, bay leaves, dried thyme, salt, and pepper.
