Bacon, Beer, and Cheese Sloppy Joes

Directions:

In a large skillet, cook the diced bacon over medium heat until crispy. Remove the cooked bacon from the skillet and set aside, leaving the bacon grease in the skillet.
In the same skillet with the bacon grease, add the ground beef, diced onion, and minced garlic. Cook, breaking up the beef with a spoon, until the beef is browned and the onions are softened.
Drain off any excess grease from the skillet.
Return the cooked bacon to the skillet with the beef mixture.
Stir in the beer, ketchup, tomato paste, Worcestershire sauce, Dijon mustard, smoked paprika, salt, and pepper. Mix well to combine.
Reduce the heat to low and let the mixture simmer for 10-15 minutes, stirring occasionally, until the sauce has thickened and the flavors have melded.
Once the sauce is thickened, sprinkle the shredded cheddar cheese over the top of the beef mixture. Cover the skillet and let it cook for an additional 2-3 minutes, or until the cheese is melted.
Stir the cheese into the beef mixture until well combined.
Serve the bacon, beer, and cheese sloppy joe mixture on hamburger buns.
