Avocado Mango Salad with Arugula

Instructions:

1. In a large salad bowl, combine the diced avocados, diced mangoes, arugula, chopped cilantro, and thinly sliced red onion. Toss gently to mix.
2. In a small skillet over medium heat, toast the pine nuts until they are lightly golden and fragrant, about 3-5 minutes, stirring frequently. Be careful not to burn them. Once toasted, remove them from the heat and let them cool slightly.
3. Sprinkle the toasted pine nuts over the salad.
4. In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper to make the dressing.
5. Drizzle the honey-lime dressing over the salad.
6. Gently toss the salad until all the ingredients are evenly coated with the dressing.
7. Taste and adjust the seasoning, adding more salt and pepper if needed.
