Apple Fritter Bites

1️⃣ Prepare the Oven and Pan: Preheat the oven to 400°F (200°C). Spray a baking sheet with nonstick cooking spray to prevent sticking.

2️⃣ Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.

3️⃣ Combine Wet Ingredients: In a large bowl, whisk the melted butter and sugar until smooth. Add the egg and vanilla extract, mixing well after each addition. Stir in the applesauce.

4️⃣ Combine Wet and Dry Mixtures: Add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the diced apples carefully to distribute them evenly.

5️⃣ Bake the Fritter Bites: Scoop 1 tablespoon of the batter for each fritter onto the prepared baking sheet, spacing them a few inches apart. Bake for 10 minutes or until they are set and lightly golden.

6️⃣ Prepare the Glaze: While the fritters bake, whisk together the powdered sugar and apple cider in a small bowl until smooth and thin.

7️⃣ Glaze and Broil: After baking, brush the fritters with some of the glaze. Then, turn on the broiler and broil the glazed fritters for 2-4 minutes, watching closely and rotating the baking sheet as needed for even caramelization. Remove them before they burn.

8️⃣ Final Glaze Application: Brush the remaining glaze over the broiled fritters and let them set on the baking sheet for about 15 minutes until the glaze hardens.
