Ingredients:
1.5 pounds of Creamer potatoes
2 tablespoons olive oil
Salt and pepper, to taste
4 ears of corn, husked
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup finely crumbled cotija cheese, plus more for topping
1/2 teaspoon chili powder, plus more for garnish
1/4 teaspoon garlic powder
Juice of one lime
1/4 cup finely chopped cilantro, plus more for garnish
1 jalapeño, seeded and finely chopped (optional)
