Perfect comfort food, my kids had seconds and thirds!

This recipe is a twist on two classic dishes: pierogies and lasagna. Pierogies are a traditional Eastern European dish made of unleavened dough filled with potatoes, cheese, and other savory ingredients. I first tried this recipe when I was visiting my cousin in Poland. She had made it for a family gathering and it was a huge hit! Everyone loved the combination of the pierogies and lasagna, and the flavors blended together perfectly. It was so delicious that I had to get the recipe and make it for my own family.

Pierogi Lasagna

Ingredients:
5 onions, finely chopped
12 lasagna noodles, cooked according to package directions
1 stick (1/2 cup) butter
1/2 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups shredded Cheddar cheese
6 cups warm seasoned mashed potatoes, store-bought
