Loaded Mashed Potatoes

Always a hit! We love making this in batches and reheating the leftovers!

Loaded Mashed Potatoes

Ingredients:

2 pounds (about 1 kg) of potatoes (such as Russet or Yukon Gold), peeled and cut into chunks

1/2 cup (120ml) milk (you can use any kind you prefer, like whole milk, almond milk, or even sour cream for extra richness)

4 tablespoons (about 60g) unsalted butter

1/2 cup (about 60g) shredded cheddar cheese (plus extra for topping)

1/4 cup (about 30g) chopped green onions or chives

4 slices of cooked bacon, crumbled

Salt and pepper to taste
